Banana Choc Chip Mmmuffins

Had been looking forward to this day - Hot Mama and Cutie Pie came over to bake muffins! Woot! I couldn't have done it without so much help from Hot Mama. She's a natural. She has this "thing" with kids. She takes such great care of them like an angel. While waiting for them to come over, I hurriedly prepared whatever necessary for baking the muffins and D was exhilarated to see me running frantically around the house.

When they finally arrived, D screamed in excitement. That was so cute... We wasted no time. Hot Mama and Cutie Pie settled down really quick and D was so fascinated by their presence. Hot Mama wanted to help out in the baking, but me being an amateur, I didn't know how to get her involved except for mashing the bananas.

She's really good with kids. When we finally sat D and Cutie Pie down on high chairs, Hot Mama single-handedly run the show. Literally. She was like hosting a cooking program right out of the TV! The kids enjoyed it and I enjoyed it even more :D

With so much going on, I was relieved that the muffins turned out fine. The 4 of us had 3 muffins with 2 scoops of vanilla ice cream. Yum-may~

Teriyaki Chicken Salad

It wasn't easy to prepare meals and look after D at the same time. Before my lovely assistant, EF Oven, came along, TV used to babysit D while I cook. That wasn't such a good idea, though I know D enjoys TV's company.

With EF Oven's help, I can now easily pop in marinated chicken and cut-vegetables into it and leave it to do its magic. However, TV is still babysitting D. Fact is, I took a quick shower while TV entertained D... But I must say that the situation was definitely much better than before.

Today was my second attempt to cook meals with the oven. I believe with more practice, not only the chicken will turn out well done and marvelous, but also, I would have mastered the art of juggling between cooking meals and taking care of D.

Anyway, this salad turned out fine. I didn't have diarrhea after consuming it :)

D's breakfast

I don't know what came over me this morning, but I just wanted to make D a better-than-average-looking breakfast. Afterall, so much was spent on those cutters, picks and cutesy-looking forks. So, I did what I could despite all the morning madness around the house.



His menu was Cinnamon French Toast Cheese Rolls with scrambled eggs and freshly cut strawberries on the side. Sounds pretty impressive, eh? Nah. It was pretty easy. All I had was:

• One egg
• A dash of cinnamon powder
• A slice of bread (sides trimmed away)
• A slice of mozzarella cheese
• 50ml skimmed milk
• 2 strawberries, diced

And all I did was:

Add a dash of cinnamon powder to a lightly beaten egg and beat a little more.
Cut bread into 4 equal-sized strips and coat bread well in egg batter.
Brown egg-battered bread strips on heated pan (coated with cooking spray).

Trim cheese into 4 equal-sized strips too.
Place cheese onto toast-strips and roll. Secure rolls with picks.

Add skimmed milk to leftover egg batter, beat and cook on low heat.
Keep stirring until egg mixture thickens and ready to serve.

There, put all together and voila!
D enjoyed his breakfast and it made my day :)

My Shiny New Toy

I can't believe it, it's here! Yes, my long-awaited oven! I think my neck might have grown 1.5in longer, after waiting for over a year for this baby. :D

Had an impromptu baking session at Hot Mama's place yesterday. We were supposed to churn out yummilicious double choc almond muffins, but they turned out to be rock-hard muffkies (muffin cookies)...

With such failure, I am determined to put my shiny new machine to good use, to rid off all muffkies! Mwahahahaha...

It'll be wonderful if D and Cutie can join in the baking. Imagine some flour on their tiny faces. How cute.
